Greetings,
Mulled warm cider makes a lovely warming drink, and besides
ypocras, you might consider sparkling cider for a cold
beverage, or something like lemonade with seltzer, or
flavored seltzer (like Clearly Canadian).  Birch beer,
ginger beer.  "Fake" ypocras can be either warm or cold. 
There's also a period lemonade concentrate that works well
warm or cold.
