I've never cooked a wild turkey, but we do have them around here.  I
suspect that instead of having the large areas of white breast meat, the
wild turkey will have dark meat instead...these guys fly rather than
being land-bound, so they use those breast muscles.  Also, I would
expect the meat to be gamier...they get more exercise than your average
tame bird.  So you might want to try marinating it a bit to help take
away some of that gaminess...unless you happen to like that sort of
thing.  You could either use wine or you could use salt water.  Other
than that, I would expect that you would cook it much the same way as a
tame bird.
