Recipe for jellied milk (white leach)
1 pint of milk
5 tsp unlfavored gelatin
1 / 2 cup sugar
flavoring agent such as almond extract, mint extract, rosewater, etc.
coloring agent if desired
Rinse 8 x 8 pan with water. After drying add flavoring agent (1 1 /2
teaspoons for an extract, 2 tbsp for rose or orange flower water) and any
coloring agent ( a few drops) desired, refrigerate until the gelatin is
prepared.
Sprinkle the gelatin onto 4 tablespoons (or 1 /4 cup if recipe is doubled)
of the milk and allow to soften for 5 minutes. Then stand the container of
milk and gelatin in a bowl of very hot (but not boiling) water and stir
until the gelatin is totally dissolved.
Meanwhile, heat the remainder of the milk and the sugar in a pot until it
simmers. Add the dissolved gelatin/milk mixture and stir it all together.
Stir continuously for 5 minutes, never going past a simmer.
Pour the gelatin mixture into the prepared pan and refrigerate for several
hours until set. Cut into squares or diamonds, garnish and serve. This can
also be used in molds.
