I've always assumed it was the proteinase papain (named after the
papaya from which it can be extracted), which I associate with
picked-when-unripe papaya and pineapple. For picked-when-unripe
bananas I get a related taste, but don't know if it would be the
same chemical.
Anyone know for certain?
