Krysta,

There are a lot of recipes available online for period dishes that are 
not very hard to make, and which will not seem too exotic to the 
"meat and potatoes" crowd.  You mentioned quiche as one 
possibility -- there are several kinds of period tarts that would do 
nicely.  Tart de Bry (cheese), Tarte on Ember Day (onion quiche), 
Torta of Herbs (eggs. cheese and assorted greens) are all 
possibilities.  There are also recipes for various kinds of pasta with 
cheese and spices.  Sauces (served on the side) can do a lot to 
jazz up plain meats.

type of recipe.  Why not browse there a little and print out some of 
the more likely recipes for your head cook?
