My help does not pay.  Period.  They get fed, maybe not on every dish in every
course of what the Lords And Ladies are eating, but the food is hot, the company
is good, and they usually get a little goody made just for them.  Nobody seems
to have a problem with it;  the clientele is paying for service as well as for
food, and the servers are not getting paid with money, just a little gruel and
first shot at the leavings from the masters' table.
