I may have answered this question before, but am about to delete my
old cooks list mail and will do so again. Japanse menus are recorded
in Yamanouchi Ryrorisho and other similar works. You can find
transcriptions of them in ZGR 19.3 They have never been translated.
That part is a problem for you. I am more or less working on a
modest leaflet about Japanese food and food culture which I hope to
have done by Pennsic next year.
