I think you'd need to add fat to the meat, otherwise you wouldn't have a
sausage after it was cooked, you'd have a bludgeon.

There wasn't a recipes section on the Raccoon page though<G>.

As to being period, if they were eaten at all in period I'd suspect VERY late
period.
