I'm so glad my first Pennsic was so wonderful!  I finally met many of the cooks
and can now put faces with names. SPCA was a wonderful group to meet and camp
with.  It even made doing scullery worthwhile.

After the cooks' potluck, Ras asked me for the recipe to the "Accidental Lamb
Dish." I am honored to share it here.

Pennsic XXX Accidental Lamb Dish

4 to 6 cups of lamb, in 1" cubes
2 garlic heads, buds peeled and left whole
1 packet of Good Seasons Italian Dressing Mix
Extra-virgin Olive oil
Cheap Balsamic Vinegar
Dried Rosemary
Extra olive oil for frying

Mix up Good Seasons Italian Dressing mix using olive oil and balsamic vinegar.
Place cubed lamb and garlic bulbs in a bowl, pour salad dressing over and allow
to stand for 30 minutes.

Heat small amount of olive oil in a wok.  Using a slotted spoon and working in
small batches, drain lamb and garlic cloves and stir-fry in wok until meat is
no longer pink. As soon as all the meat & garlic is stirfried, add all meat and
garlic back to the wok and pour remaining marinade over.  Bring to a boil, add
a pinch of dried rosemary, reduce heat and simmer until meat is done and garlic
is fork tender.

Note:  I love lamb and garlic sauteed together and dipped in cucumber/yogurt
sauce. So, I poured olive oil into a pan to do just this.  To my suprise, the
olive oil turned out to be Italian Dressing in an olive oil bottle.  Rather
than throwing anything out, I "made do."  I'm glad everyone enjoyed it.

Lord Ras and Elysant came to camp to taste the dishes I made from my German
Feast in September for my Shire.  Although no longer hot, Ras tasted and
pronounced "I'd pay good money for this food."  I was in 7th heaven!

Maybe I'll do the accidental lamb dish next year on purpose!
