But wait! You have to go back to try the raw beef sashimi. Alice can
have the sin sullo (along the lines of a Mongolian hotpot; the diner has
great control over what goes in it).

I suspect the kim chee thing may be more a function of a high turnover
rate for the kim chee (therefore it is very fresh, although some, as
you've seen, like it pretty rank), rather than being toned down for
Americans.
