JANICE'S GAZPACHO

2 fresh tomatoes, cored & diced small
    1 seedless cucumber, peeled & diced small (or use a regular cucumber but
cut out the seeded part)
    1 bunch scallions or spring onions, diced small. (You can use the green
part too, up to where it gets tough)
1 green pepper, seeded & diced small.

2 cloves fresh garlic, peeled & diced small
1 small bunch parsley, well washed & minced small
1 small bunch of basil, washed & diced small

1 *24* oz jar of V-8 vegetable juice

**DRESSING**
1 T honey
3T fresh lemon juice
    3 T fresh lime juice (I have used the plastic squeezee lemon & lime and
the soup still came out great)
3 T olive oil
3T balsamic or wine vinegar
salt & pepper to taste

Wash all the vegetables.
Cut the vegetables small.
Add the minced herbs & garlic.
Make a dressing of the rest of the ingredients.
Mix well and add to the vegetables.
At this point you can puree the soup, chill & serve OR
    puree some of the soup and have the small vegetable chunks floating in
the soup, chill & serve.  OR
Not puree any of the soup, chill and serve.
