Greetings.  If you are looking for references for using cane sugar,
how about going to some of the "history of sugar" books?  There are
a number available from libraries.  The one I had used years ago was
by Strong.  Most of them detail where sugar began, the process of
early refining and where early refineries were, how and where sugar
spread, types of sugar, etc., etc.  The cookery books don't deal
with this type of information.  Most of the books will then go into
the modern methods of refining as well as the introduction of beet
sugar and other sugars.
