Taking a wild guess, I would venture to say that recipes were not written
down, rather passed through oral tradition.  Of course, some of the more
learned gentles (and/or meanies) of the list might have more information on
that :-)

Hmmm.  Well, let's see...  From (failing) memory, there's Highland's
gallic, Lowland's gallic, and a couple other versions, which were used in a
more or less widespread fashion depending on where you were, and who you
were...  Not sure where to find examples of these nor translations.
