Well, since we usually have beans around to grind for coffee, we can go
through them fast enough to not have to freeze them.

I would bring them out and thaw them to room temperature, if they are
sweating just toss them in a paper towel lightly to dry the surfaces and
start coating them. I don't know how anybody else does it, but I spread
out a sheed of wax paper, toss a handful of beans in melted coating
chocolate and then pull them out with a small loop of wire and place
them on the wax paper and leave them until they are set, then I like to
package them up and hand them out within the next 2 or 3 days. I keep
them cool and dry until I hand them out.

I also like putting finely powdered expresso in milk chocolate until it
won't hold any more, roll it into little beans and dip the fake beans.
It makes it a bit surprising to expect a bean and just get expresso and
chocoalte ;-)
