Swallenberg sauce is from "Ein Buch von Guter Spise."  It's made from red
wine, egg whites, garlic and black pepper, maybe some bread crumbs and
ginger.

So what is "Swallenberg" sauce? I don't think I've heard of it. Is this
period? I'd assume not, since you imply the the 'real' thing is alcoholic.
And I'm under the impression that most (all?) alcoholic sauces are post
period. I guess I'm thinking of sauces using hard liquor. Wine and beer
and I guess cider were used in period as sauces and they would have had
some alcohol. Anyone know of any period sauces using brandy or other
distilled liquor?
