Gwyneth (and others),

Thank you for your help and comments.  Let me see what else I can tell you.

The dish is from _Two Fifteenth Century Cookery-Books_, and is an English
recipe.  I am using red wine (at this point, a bordeux) in the cooking of
it.  As I understand it, His Grace Cariadoc included this recipe in his
Miscellany - I haven't read his redaction yet - intentionally.  I don't want
to copy, I want to do my own. ;)  I'll read it after judging.

I have read the appropriate sections of the Florilegium (thanks, Stefan, I
about live there), and have several good ideas.

Anyway, I think that's it on the additional info part of the questions.
