Could it have something to do with not wanting to let the mixture flavor 
wooden bowls or leave a residue? Or maybe that the pewter bowls hold 
heat/cold better? Just a thought. I used to wonder why as a kid whipped cream 
receipes always start with "take a chilled metal bowl" until I actually tried 
to make it...then it made sense. So, I suspect there is a reason...even if it 
is only that was the way his "master" made it....
