Blanching stops the enzyme action that causes vegetables to go bad.
According to my canning book, freezing alone slows, but does not stop the
process.  I sort my asparagus by thickness.

Little finger and smaller - blanch one minute
Little finger to thumb - blanch two minutes
Thumb thickness and bigger - blanch three minutes

I don't see much asparagus around here thicker than my thumb.
