SC - Fish (was Per head budgets)

A few years ago, we rather successfully served salmon as part of the
buffet lunch for our Baronial Investiture.  I bought it whole from a
local grocery/butcher's/fish place, and they smoked it for me for a
couple of cents/pound.  People were completely amazed, the fish was
wonderful, and it wasn't that expensive....
