Living in different parts of the world, I find that nobody but USA'ers
seem to like pumpkin so much!  Some countries contemptuously refer to
pumpkins as animal fodder and are disgusted that people would eat this! 
Canned pumpkin may well be hard or impossible to find.

If you cook your pumpkin to a dryish puree' stage, that will be an even
better substitute.  That is, cook pumpkin chunks in water until very
tender, drain thoroughly, mash, and to be sure you are not too
liquid--not as much as applesauce, for instance-- you can put the puree
in a sieve over a bowl until a spoon inserted in the mash slumps
gradually rather than remaining upright or falling over.  Clear as mud?
