Pigtail and Kraut
1 pig tail
1tsp salt
16 oz. water
32 oz. homemade kraut (if you can get it, otherwise, rinse store bought kraut 
in a strainer three times)
1 Tbs. sugar
salt to taste
pepper to taste
1/2 cup flour

Put pig tail and 1 tsp salt in water and cook uncovered at a slow boil until 
meat is falling from bone (about an hour).  Add kraut and sugar and bring to 
a rolling boil.  Make a batter from the flour, salt, and pepper, and enough 
of the broth to make a thick batter.  Drop by 1/4 tsp. into the boiling 
kraut.  Allow to cook approximately 2 min. after all the dumplings are added. 
 Serve and stand back.
