Marina,
Found the same problem with spaetzle and ravioles, and later with some
parsley dumplings, which did not work up well in large amounts. The
spaetzle and raviole freeze well, and can be made ahead. Haven't tried
doing the dumplings in ordinary batches--the test batch was great--and
freezing, but if you try freezing your gnocchi and are happy with the
result, then you only need the warming space.
