You don't have to cook something for the pot luck there at the event.
Two years ago at Pennsic 27, since I was flying up and didn't have
access to kitchen facilities there, I made a batch of the pine nut
candy at home and took that up with me. Other than having to keep
breaking it apart or it getting soft and then hard because of it's
susceptibility to moisture that worked out well.

I might precook something for this coming Pennsic Pot luck as well,
since for the last two years I've had trouble getting the supplies
or sometimes the time to provide what I'd like to do.

Another idea is to use your ice chest to pack things in to take to
Estrella and then put the items in something else once you get there
and use your ice chest for food by making a trip into town to get
the food items. I assume ice is available on the site.
