In my kitchen?  Definitely vinegar.  Occasionally cider.

Speaking of vinegars, I tried Brigid's recipe for cider sauce the other
night, using white basaltic vinegar instead of the white wine vinegar.
Verrryyyy nice!

Wow. That would be nice. Even to have room for two butts would be nice.
What do you have, one of cider and one of wine? Or perhaps cider and
a good, aged basalmic vinegar?
