Just a comment on this - email is a hard medium to get emotions 
though.  "Is that documentable" can be said in a scoulding way, a curious 
way, or a 'that would be so COOL, PLEASE be documentable' way, but it will 
always look the same on the screen.  People here are rarely scoulding - 
more often they are curious.  They have yet to find a way to document 
something, and would love to know that you have.  There are a couple of 
exceptions to that, of course, but in general you're best off assuming that 
the tone is a curious one and not a criticism.

(Of course, you can always get around the problem entirely by answering the 
question upfront.  Put "period - source", "perioid", "not period but yummy" 
or something like that with each dish and no one will have to ask.)
