After a couple of years of searching, I have been able to find the book
"Food in Chinese Culture" via http://www.addall.com. I have a tattered
paperback version that I bought over years ago, and am now able to replace it
with a hardback.

This was THE book that set me on my journey of Oriental food research. I first
taught from it back in 1990.
