Having had a wonderful lecture on cheese making I can at least answer one
question.
Authentically you wouldn't colour cheese 'cause it was made with excess
summer milk and would already be creamier than the pale hay fed stuff.
The different cheeses came about because of the different bacterium in the
dairies and the different diets/breeds of cattle.
things like cheddar and cheshire were known in the sca period. but only
regulated later.
