[Sca-cooks] OOP: Victoria Sponge Cake

A true Victoria sponge is made with
6oz Self Raising Four
6oz Castor Sugar
6 oz BUTTER
3 eggs beaten
pinch salt
2 T spoons vanilla extract.

Beat together sugar and butter until light and fluffy
add salt
add eggs slowly and beat thoroughly between each addition
FOLD IN flour slowly.
Pour into a prpared cake tin (8 in ROUND)
bake in a preheated oven at 180 c for 35 mins until golden and firm to
touch.
Allow to cool
Mix up a good butter cream for top
USE BUTTER
(icing sugar and butter) flavoured with a little vanilla
slice cake in half to for a top and bottom.
fill with butter cream or jam
sprinkle on icing sugar or decorate with butter icing
If you want to add flavourings try
coffee
chocolate
vanilla
lemon
Added before the eggs

By tradition the jam in the center is RASPBERRY The best you can get.
