It's a rich custard made with eggs and cream, finished with a layer
of sugar that has been caramelized to a solid state which is the
"brulee"="burnt" part, but which shouldn't be burned, just cooked
until it is the color of brown sugar and a solid thin crunchy sheet
topping and contrasting with the creamy layer beneath
A properly made one is my daughter's favorite dessert.
