A good basic but I am used to using 8 yolks, 1 cup sugar, 4 oz. cornstarch,
as a stabilizer. And when I make mousse like things, I use Unsweetened
Baker's choc. And 6 oz. of it. You can substitute Semi-Sweet, but use about
half less sugar.
Finnebhir, off to make Triple Choc. Mousse Cake...
