I had always heard (no documentation) that:

1)the spices helped to PRESERVE the meat (which was always slaughtered as fresh-to-eating as possible

2)In the extremely hot climate people's appetites were languid, and the spices excited the mouth and desire to eat --look how little spicing there is in Scandanavian food, where the cold keeps the appetite very brisk.

(Re-reading this, it sounds almost as specious as the covering-the-rotten-taste theory, but ...
