Well, I think you can get a good head start simply by participating on
this list for awhile. I've learned quite a lot about period cooking here
since this list was formed, as well as a bunch about cooking in general.
And even a bunch of non-cooking stuff.

And I have learned *I* wouldn't want to be employed in an institutional
kitchen setting. Engineering is much safer. :-)
