Food for Fifty is great. But remember that the portion sizes they list are
for a normal meal of maybe 5-7 dishes, not one of our feast running anywhere
from 10-20 dishes. You want smaller portion sizes for each dish, to have,
say the total amount of carbs equal or close to the total recommended serving
of carbs, but split between several dishes. Meat you can usually double what
Food for Fifty recommends for a portion, but still split between all your
meats. Veggies are generally best at no more than 1-2 oz/ person, since some
people will eat almost none of them. Same for fish.

Shopping at the cheapest place in town may cause you to sacrifice quality.
Sometimes it's better to pay a little more for higher quality.
