I use the fruit leather recipe and then cut or mold the semi-firm paste and 
begin the air drying of the shapes.  I toss them with sugar usually twice a 
day and flip the shapes so all the sides have a chance to dry.  They never 
seem to completely dry out to a brick doing it this way.
