I *adore* Justin Wilson. I lived in Texas many years ago, before he became so 
heart healthy (and yes, he is, compared to how he *used* to be). He was this 
big round, cajun talking man who started out giving safety discussions to 
corporations down there, and cooking lunch for everyone after. Don't know how 
he came to combine that routine, but it worked. Then he stopped giving the 
safety talks when OSHA became more widely known. To this day, Justin Wilson 
Chicken and Green Beans in a bag is one of my favorite meals.....
