Perhaps some of the recipes and information in this file in the Florilegium
might be of interest to you, then:

I think there are others in the Florilegium as well, but they are usually
organised by food type rather than by region. Many of the new foods from
the Americas showed up in Spainish cooking first, but if you are looking
for old world foods these can be found also.
