SIMPLE CHICKEN SOUP

1 Whole chicken
1 # carrots
1 parsnip
1 large onion
salt
pepper
1 bunch dill

Take whatever is stored in the chicken cavity out and put it aside.
Pull off any visible fat pockets,
Rinse chicken, inisde & out. in cold running water.
Put it in a large stock pot.
If there was a neck and /or gibblets inside the chicken, throw this into the 
stock pot too.

Cover bird with water and add an extra 4 cups of water.
Bring to a boil.
Skin the skum off as it forms.

After boiling the soup chicken for about 15 minutes and skimming the skum, 
add more water if the water level is low.
Add the dill which you have first tied into a loose knot.
Add salt and pepper
Scrape the carrots and the parsnips, cutting off the ends,
Cut into chunks and add to soup. 
Peel the onion and add, whole, to soup.
Turn down heat to about medium-low on electric or small flame on gas and let 
cook, covered for about an hour.
When the chicken is tender and falling apart, remove from soup.
Remove the onion and parsnip.

Remove skin from chicken, pull meat off bones.
Return chicken to soup.
Serve
