I don't know if the Anglican/Episcopal church retained the awe of the
consecrated wafer that the Catholic church has. If so, an honest mistake
on your and the celebrants's part is not in the same class as the idea of
slipping a wafer into a non-beleivers soup! In either case, they, as the
beleiver, are the ones in peril over it, not you.
For next time, once you are at the head of the line, look the celebrant in
the eye, give a small shake of your head and keep your hands down and mouth
closed. There's many reasons to go up to the altar but not wish to partake.
The celebrant will pause for the moment until the line in front of you
moves, allowing you to do so. At worst, they might take that moment to
give you a blessing, an action with goodwill behind it that I hope would not
offend you.
