Re the recipe that thomas posted,
I beleive the second half of the meat mixture is intended to create the
other half of the ball surrounding the egg yolk, given that the verb
"serrare" means to shut or to enclose.
seems to me we have a precursor to scotch eggs here ;->

and to answer one of your questions, *so far* I haven't seen anything
similar in the rest of the Italian corpus
