Raised beds. They  are  constructed in such a way so all parts of the growing 
area is reachable from the side paths. 4 ft wide is about as wide as they can 
be. Mine have a brick foundation around them. Most medieval pictures of 
kitchen gardens that I have seen show extensive use of raised beds or what 
appears to be raised beds.
