The Vidalia onion is merely a Yellow Granex which is
grown in the "special soil" around Vidalia, Georgia.
Manufacturers in the area refuse to tell me what the
nutrient/soil makeup is in the region, so I can't even
begin to imagine how to re-produce it in the garden.
If you know of anyone who lives in the Vidalia area,
you could ask them to send you a sample of the soil,
and have it checked out at your local Cooperative
Extension office for a nominal fee.

I picked up two "Texas Sweets" last night for my
brother's Spanish Salad recipe, and they were, in
fact, very sweet.  Very close to a Vidalia in
sweetness, but a little more fibrous in texture.  They
would be exceptional baked....
