Jaggery is unrefined palm sugar. Some of my Indian cookbooks have
suggestions for substitutes--mostly along the lines of a combination of
brown sugar and molasses. Found this on a web site: 1 cup dark brown sugar
with 1 T dark molasses. That sounds about like what I used the last time I
made a recipe that called for jaggery.
