Maybe it is your state. I saw beef tongue at my local, ordinary
grocery store just last week.

We've talked about lungs being illegal to sell, in the US, but that
is about all. Perhaps someone who has access to the USDA regulations can
detail those meat cuts that are illegal to sell.
