Both of Clifford A. Wright's books Mediterranean
Vegetables [new in 2001] and A Mediterranean Feast
[2000] discuss and contain recipes that use fava beans.
Mediterranean Vegetables is especially good on
how to prepare fresh beans and how to use different
varieties of fava beans. You might want to check your
public library or bookstore for copies.
