you don't brew cider as there is no heating involved.
cut apples into chunks, skins, pips and all, removing any really bad bits.
put into a bucket and hit to mash with a big stick
put into a juice extractor of somesort...a press authentically.
extract as much juice as possible.
it will be dark in colour.
seal into fermentation jars with an airlock and come back in a year.
it really is that simple.
