Peach Cordial:

1 quart pureed peaches
2 cups sugar (more or less to taste)
1/2 tsp. ground ginger
1/2 tsp. ground clove
1/2 pint dark rum
cinnamon sticks

Mix peaches, sugar, and ground spices.
Simmer over a medium low fire 15 minutes,
stirring constantly to prevent scorching.
Allow to cool to room temperature.
Gently stir in rum.
Put 1 cinnamon stick in a sterilized bottle.
Pour in Peach mixture.
Cap tightly.
Repeat last three steps until you run out of
Peach mixture.
Allow to sit in a cool, dark spot for 3 to 6
months.
For the purists out there, you would then filter
through a coffee filter to remove the pulp and
the cinnamon stick.  I like mine with the pulp
still in it.  It is wunnerful over vanilla ice
cream!
