Gosh, I don't know, that seems a bit complicated.
How about the fish lightly poached in seasoned water and
then sprinkled with a bit of vinegar or verjuice?

Or grilled meat simply sprinkled with spices?

Or Hanony?

Or Pain Perdieu?

Or.....
