Oooh, oooh! You have documentation for these? Dembinska says that a
barszcz like soup was made of cow parsnips, but she doesn't consider the
16th century. In Western sources , there is not much documentation for the
use of beetroot at all, so any documentation is important.

Please, please can you post your documentation and citations? I don't read
Polish so translations would be a godsend.
