Actually, the "hams" on an animal refer to the section
from the hip to the knee. Sometimes, by extention, it
will refer to the buttocks in humans, for example in
some literature, a character will be described
as,"sitting back on his hams". It's one of those words
which has gone from a more generalized usage to a more
specific usage, much like "venison" used to mean any
wild meat, and now specificly refers to deer meat.
