Ha ha.  Toysan is a region and a people of southern China. I believe
Master A's wife is from there.  I found an old message from this list
wherein he describes the cuisine:

Everyone does Nouvelle Szechuan already, some people do Hong Kong, but
Toysan is largely unknown to the non-Chinese population in the USA.
Well, it might work in NYC, who knows?
